Galangal Syrup
If you like ginger in cocktails, then you’re going to love galangal syrup. Fresh galangal can be found in Asian markets and looks just like ginger root, but its flavor is stronger and spicier—perfect for spicy cocktails like the Warm-Hearted, a chile-spiked take on a boozy hot chocolate. If a recipe calls for galangal syrup and you can’t find any, you can replace it with ginger, but the result will be far less pungent.

INGREDIENTS
- 1 galangal
- .25 Cup water
- .25 Cup sugar
INSTRUCTIONS
Step one
Make simple syrup from water and sugar.
Step two
Wash galangal root and cut into half-inch pieces, skin on.
Step three
Place galangal pieces into blender and cover with simple syrup.
Step four
Blend on high for 30 seconds, then strain with a fine mesh strainer.
