Gin mixed with coconut and tonic is officially the best Highball that you’ve never had (to be honest, we only just discovered the resonating power this trifecta holds). When combined, gin and coconut water create an herbaceous, floral symphony of deliciousness. Then, with a topper of tonic water, the duo get an effervescent, bitter boost. While it’s made with just three ingredients, the cocktail has more depth, flavor and character than most tiki drinks, with all of their fresh juices and fancy syrups. Best of all, this simple drink is ready in minutes.

When choosing a gin, opt for one that is light, citrusy and less juniper-forward, like Fords or Plymouth. This will allow the floral flavors of the coconut to shine through in the drink and the subtle bitterness of the tonic to come in on the finish. Finding good coconut water can be a little difficult depending on where you live. We have found that the best brands to use are less sweet, fresher tasting and don’t have chunks of coconut flesh in them. Favorites include Harmless Harvest Raw Coconut Water, VitaCoco, Naked Organic Coconut Water and CoAqua.

INGREDIENTS

  • 1.5 oz Gin
  • 1.5 oz Coconut Water
  • Tonic
  • Lime

INSTRUCTIONS

Step one

Add the gin and coconut water to a highball glass.

Step two

Add cubed ice and top with tonic water.

Step three

Stir with a bar spoon to incorporate. Garnish with a wedge of fresh lime.
